Hari Raya Recipe – Kelantanese Chicken Kuzi
Hari Raya fever is in the air.... I cant wait for my balik kampung session and get to eat all the yummy food my mum will serve. One of them is Chicken Kuzi or Kuzi Ayam. This Resepi Hari Raya serves 6 to 8... its pretty simple, why dont you try it for your open house this year?
Kuzi Ayam/ Chicken Kuzi
Ingredients:
* 15 dried red chilies, soaked
* 6 red chilies
* 20g shallots
* 2 cm ginger
* 1 sachet Curry Nasi Kandar Mix (Maggi ®)
* 100g ghee
* 1 kg chicken, cut into pieces
* 6 tbsps tomato ketchup (Maggi ®)
* 300 ml evaporated milk
* 1 chicken stock cube (Maggi ®)
* 600 ml water
* 100g black raisins
* 600 g fried shallots, sliced
* 100 g 'kerisek'
* Coriander leaves
* Fried cashew nuts
Methods:
1. Blend ingredients A. Add in Curry Nasi kandar Mix and mix well. Set aside for 20 minutes.
2. Heat oil and stir fry ingredients A until aromatic. Add chicken pieces and tomato ketchup. Fry for 2 minutes.
3. Stir in evaporated milk, chicken stock cube, water, raisins, and fried shallots. Bring to boil, simmer gently until chicken is tender.
4. Stir in 'kerisek', salt and sugar to taste. Garnish with coriander and cashew nuts.

Recipe Beef Potato Casserole
Here is another western food recipe that I would like to share with you guys. My friend Lina used to bake this and I love it. But for me to make it myself is well.. quite difficult because after all I am a very determined woman when it comes to cooking. ehhehe..
Anyway, heres something good and worth trying :
2 tablespoon butter or margarine
1 small onion, thinly sliced
1 celery stalk, chopped
1/2 of a green pepper, chopped
1 small bay leaf
1/3 cup ketchup
3/4 cup water
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon Worcestershire sauce
2 1/3 to 3 cups cubed cooked beef
1/2 cup cooked sliced carrots
1 cup mashed potatoes
In a medium skillet melt 1 tablespoon of butter. Add the onion, celery, green pepper and bay leaf and cook for 8 minutes over low heat. Pour in the ketchup and water. Stir until blended well. Heat until mixture bubbles then remove from heat. Season with sugar, salt, pepper and Worcestershire sauce. Remove the bay leaf and add beef and carrots. Mix well. Pour into a medium casserole dish. Spread the mashed potatoes over the top of the casserole. Coat with 1 tablespoon melted butter.
Bake at 350 degrees for 20 to 25 minutes.

Halal Christmas Recipe – Roast Beef
Hi there, I am collecting halal xmas recipe! Just because xmas is not celebrated by Muslims doesnt mean we cant enjoy the food right?hehe! The following is a roast beef recipe that doesnt use any lard or alcohol. Enjoy!
INGREDIENTS:
# 1 Standing roast of beef (4-rib)
# 2 tablespoons Flavorless cooking oil
# Salt and pepper; to taste
RECIPE DIRECTIONS:
1. PREHEAT OVEN TO 450F. TRIM the excess fat from the roast, leaving only 1/4-inch of fat. Heat the oil in a large roasting pan over medium-to-high heat on top of the stove. When the oil is hot, place the roast, fat-side down, in the pan and brown for 5 minutes. Turn the roast on one end and cook another 5 minutes. Turn on the other end and cook 5 minutes. Remove from heat and discard fat. Sprinkle with desired salt and pepper. Place roast in oven and immediately reduce heat to 350F. Roast approximately 12 minutes per pound for medium-rare, or about 2 hours for a 10-lb roast. Remove the pan from the oven, remove the roast from the pan and let stand for 25 minutes before carving. To serve, strain the gravy into a sauceboat and carve the roast at the table, counting on about 2 people per rib.
2. FREEZING THE ROAST: Do not carve the entire roast if you don't have to. A whole solid piece of meat is more successfully cooked when defrosted than a few smaller pieces. Before freezing, heat a dry fry pan over high heat on top of the stove. Place the remainder of the roast, cut side down, in the pan and sear well. Allow the roast to cool to room temperature. Wrap with freezer paper and then over wrap in plastic wrap. Label and place in the freezer for up to 1 month. Defrost, without unwrapping, in the refrigerator for 24 to 28 hours. To reheat defrosted rib roast, wrap prime rib in 1 layer of microwave plastic wrap and place in a covered roasting pan or Dutch oven.
3. Cover, place in the oven, turn temperature to 250F and cook about 8 minutes per pound or until a meat thermometer placed in the thickest part of the roast reads 110F. Remove pan from the oven and turn temperature to 450F. Unwrap the roast, replace, uncovered in the pan and replace in the oven for about 15 minutes to crust the outside.
